Quarantine Muffins

I LOVE MUFFINS. Okay, I love all baked goods. But still. Muffins are special because they're basically dessert for breakfast. We were all bored of our regular breakfasts so I whipped up these from scratch blueberry muffins. They were surprisingly easy!



Here's the easy-peasy recipe:


  • 1 1/2 cup flour

  • 3/4 cup sugar

  • 1/2 tsp salt

  • 2 tsp baking powder


  1. Mix dry ingredients

  2. Pour 1/3 cup vegetable oil into 1 cup measuring cup. Add egg into that cup. Add milk until cup is full. Mix into dry ingredients.

  3. Fold (fancy word for carefully stir I guess😬) in 1 cup blueberries or {chopped} fruit of your choice.


Make a fancy crumb topping by mixing:

  • 1/4 cup brown sugar

  • 1/8 cup cubed butter

  • 1/4 cup flour

  • 1 tsp cinnamon


  1. Fill muffin cups almost completely for beautiful mushroom-y muffins.

  2. Add topping prior to baking, bake at 400 for 20-25 mins.
